TECHNICAL INFORMATION
Viticulture
Carefully managed grape production in the vineyard with the use of natural sulphurous agents. No weeding is practiced, only manual or mechanical mowing between rows. The harvest is exclusively conducted by hand, removing underripe and damaged clusters.
Winemaking
The grapes are picked and moved in small boxes to the cellar, where they are de-stemmed and fermented with maceration of the skins in contact with the grape must for approximately 14-18 days, after which the wine is drawn off. The final stage is the malolactic fermentation which reduces the high acidity of this wine, making it softer and more balanced.
Profile
It has a deep red colour. Pleasant roundness of tannins and good length, balanced acidity with excellent structure and complexity.
Pairing
It matches well with cold cuts, roasted and grilled meats, and Piemonte appetizers.
